Aisha's Pastry is an artisan Pastry home-based company characterised by the unique artistic vision of its owner Soukaina. A mix of passion with high-quality ingredients, fused with the combination of French, Japanese, and Arabic touches, is the brand's signature. .

Tell us your story, how did you start cooking/baking?

”I initially began baking and experimenting with ingredients around 2014-2016 and found it to be very therapeutic and relaxing. In 2017 my hobby grew into more of a serious interest, and at that point, I realised that it was something I wanted to pursue in terms of a full-time career.”

What is your favourite dish to make?

”That’s a tough one! But If I had to pick, it would be the deliciously sweet Russian honey cake. I would describe this dessert as 7 layers of soft, caramelised honey cakes that taste like the fine marriage of lotus biscuits, honey graham crackers and gingerbread cookies, sandwiched between a cloud-like sour cream & whipped cream.”

What is your cooking dream?

“The possibilities are endless, there are just so many things I want to do! Taking everything step-by-step helps me stay organised and on track. I would love to publish my own cookbook to encourage other people just like me who have a passion for baking, or even one day open up my own Café. There’s something about baking for others and seeing them take that first bite that brings me joy.”

Aisha's Pastry made a special macarons box for the MBA students at Imperial College. They were ecstatic and loved the beautifully made macarons. Each person had more than two, and it wasn't enough, haha. They were surprised when I told them that it was homemade because it was so good! One even said it was better than the cafeteria's :P
